Zucchini (or Courgette) Tips

Zucchini CourgetteAugust 8th is known as "Sneak Some Zucchini Onto Your Neighbor's Porch Day" or "Leave Zucchini On Your Neighbor's Doorstep Day".  It is around this time of year in the Northern Hemisphere that zucchini finally have the heat they need to really start producing.

Zucchini (or courgette's in other areas of the world) grow so rapidly when it is warm, that you may be surprised to find them weighing several pounds where only small, cucumber sized fruits were just a day or two before.

Now there are many places on the internet and in books where you can find recipes for zucchini, but no matter how much "zucchini bread" you make, you'll probably have leftovers.

I've found that the easiest thing to do is to incorporate them into a wide variety of foods by removing their moisture content.  This is very easy to do, and will reward you with a low calorie ingredient that will help you save money and loose weight.

A Practical Pagan's Way to Prepare Zucchini for Recipes:

  1. Remove the seeds and then shred them (peel and all) in your food processor.
  2. Freeze the shredded zucchini overnight.
  3. Thaw out the next day and squeeze out all the liquid released from the cells that burst while freezing.  It is easy to do this by wrapping it in cheesecloth or a threadbare towel.  The liquid can be used as a soup stock.

A Practical Pagan's Way to Prepare Zucchini for Recipes:

The wrung out shredded zucchini can be refrozen to store, but using it is fun!  Add a cup to any cake mix to boost the fiber content, mix a cup with a pound of beef to make burgers more moist or to extend meatloaf, add some to muffins, cookies, etc.  When using ground meat for a recipe like spaghetti sauce, mix some zucchini shreds into the meat before browning.  When making apple butter, you can even sneak a few cups of the shreds into the sauce before it cooks down.  When using it for butters and jams in this way, I used shreds from peeled zucchini as the thicker rind may cause an unpleasant texture if the zucchini fruit was overly mature.

 It makes for an easy way to extend your budget and reduce your waistline.
